Momotombo Fabrica de Chocolate is a small artisan company of bean-to-bar chocolate from Managua, founded in 2004 to produce chocolate made with selected Nicaragua cacao.
Nicaragua is an exuberant tropical paradise formed by ardent volcanoes that devastate and enrich the land with wild fertility. A geologically young country home to some of the most aromatic cacao in the world, consumed here for more than 3,000 years, when the Mayan people lived in these lands.
Momotombo (whose name means “great bubbling top”) is a Nicaraguan volcano located in the department of Leon, near the town of Puerto Momotombo, 1,297 meters high.
Momotombo maintains direct relations with the small traditional companies that supply the highly selected cocoa, which is transformed into quality chocolate in the artisan factory of Managua. Other ingredients such as cane sugar, dried and fresh fruit, coffee and spices are also available from local producers of excellence.
The recipes do not use lecithin and vanillin, but only local products, ensuring that the added value is to the benefit of the native populations of the area.
The International Cocoa Organization (ICCO) has recognized Nicaragua as one of the 10 countries in the world that produces and exports 100% Fine Cocoa.
The variety of cocoa used is Trinitario Accriollado with a high percentage of Criollo coming from the areas of La Dalia–Matagalpa, Rio S. Juan, Mombacho, Quilali–Nueva Segovia.
The wild aromas of the Central American forest are responsible for the extraordinary notes of walnuts, coffee, tobacco, aromatic wood and spices that characterize Momotombo chocolate.
